On June 23, 2018 at 7pm, the Center for Ageless Living will celebrate its eleventh annual Field to Food event, “It’s a Really Big Dill”, on its campus at 3216 Hwy. 47 South in Los Lunas, N.M.  “This year’s menu is inspired with fresh picked Dill from Five Leaf Organics and milled Flour, Blue Cornmeal and Sopapilla mix from Valencia Flour Mill in Jarales, NM” states Suzette Lindemuth, Director of the Center for Ageless Living.

The Valencia Flour Mill is a local, multi-generational family-owned business since 1914.  Owners, Jose & Kathy Cordova, have successfully transformed their small business from producing only small amounts of baking flours, to annually producing over 300,000 pounds of product. Jose Cordova, an engineer, fully restored the 20th Century mill and flour packer in 1990.  “I am after flavor, not the whiteness of the flour,” comments Cordova, “the flavor is in the skin of the wheat berries and to keep the flavor we grind the whole grain.”  We are excited to be partnering up with them.

The Center’s Field to Food event is about focusing on eating well to age well and honoring local foods. With the belief that local foods and healthy eating habits are one of the main factors to successful ageing, this event features produce from the Center’s Five Leaf Organic garden and ingredients produced within a 100 mile radius of the Center.

 

Menu items include:

APPETIZERS: Queso Fresco with Dill and Blue Cornmeal Crackers
Beef Meatball Skewers drizzled with a Dill Tzatziki Sauce

SOUP:  Cold Dilled Beet Soup with Crème Fraiche
SALAD: Fresh Garden Greens with Diced Tomatoes, Crunchy Peas and Pickled Red Beets served with a Buttermilk Dill Dressing
ENTREES: Baked Trout Fillet dusted with Blue Cornmeal and served with a Dill Sauce
Baked Vegetarian Dill Lasagna made with Fresh Handmade Ricotta
DESSERT: Sopapillas served with Local Flavored Honey

“Proceeds from the event go to support the Center’s Field to Food Program, which grows and distributes fresh produce, in season, to home-bound elders in Valencia County and the Community Garden Program,” comments Lindemuth.
